shrimp tacos.

my go-to summer dish?  shrimp tacos.  so easy.  full of flavor.  light.

i don’t follow a recipe, exactly, but i will share my process.

for two people to eat generously, i use about 1.25 pounds of shrimp.  i buy the uncooked, peeled, and tailed shrimp from the seafood counter.

thaw the shrimp.  put them in a glass dish – drizzle with some olive oil and a couple squeezes of lime juice.  then add some salt and pepper.  let the shrimp marinate for about 30 minutes.

heat a grill pan to medium heat.  grill the shrimp several minutes on both sides, before coating begins to stick to the pan.  serve on warmed corn tortillas with sour cream, lettuce, shredded cabbage, and feta cheese.
